My Grandmother makes this really good Fort Knox Pie every thanksgiving.
Ingredients:
Crust:
2 cups oreo crumbs
3/4 cup chopped pecans
1/2 cup melted butter
Filling:
1 envelope Knox unflavored gelatin
1/4 cup cold water
2 cups whipping cream, divided
6 oz. semi-sweet chocolate chips
2 eggs
1 tsp. vanilla extract
1 cup of caramels
2 tbsp. butter
Combine oreo crumbs, pecans, and butter. Press into pie pan and up sides to form a rim. Bake at 350º for 10 minutes. Cool.
In a pan, sprinkle gelatin into water. Stir over low heat until completely dissolved. Stir in 1 cup cream. Add into a blender with chocolate. Process until chocolate is melted. While processing, add 1/2 cup cream, eggs, and vanilla. Process until blended. Pour into a bowl. Chill for about 15 to 20 minutes. In a small pan, combine caramels, 1/4 cup cream, and butter. Stir until the caramels are melted. Pour onto crust. Let cool for about 10 minutes. With a whisk or spoon, beat the gelatin mixture until smooth. Chill until it is firm. Finish with whipped cream on top.
