My grandma, before she passed away, would always make Pecan Pie bars everyThanksgiving, and we´ve continued the tradition.
Ingredients:
3 cups of purpose flour
½ cup of white sugar
½ teaspoon of salt
3 tablespoons of margarine, melted
4 eggs
1 ½ cups of light corn syrup
1 ½ teaspoons of vanilla extract
2 ½ cups of chopped pecans
Preheat the oven to 350 degrees and grease a 10 x 15 jelly roll pan. Stir together the flour, sugar, and salt. Cut in 1 cup of margarine until mixture is coarse crumbs. Apply this mixture evenly over the prepared pan, and press in firmly. Bake for 20 minutes. While that is cooking, in another bowl, mix together the eggs, corn syrup, 1 ½ cups of sugar, 3 tablespoons of margarine, and vanilla. Stir in the pecans and spread the filling over the crust and bake for 25 minutes. Allow it to cool before slicing into bars.
