Every Thanksgiving my Aunt Debbie makes her infamous Pineapple Casserole; my all-time favorite holiday recipe.
Ingredients:
2 (20 oz.) cans of chunk pineapple, unsweetened (drain and reserve juice)
2 c. (8oz.) grated cheddar cheese
1 c. sugar
3 Tbsp. flour
4 Tbsp. pineapple juice
1 stick butter, melted
1 c. Ritz cracker crumbs
Instructions:
Mix sugar and flour together and stir in pineapple juice. Mix pineapple, cheese, melted butter, and sugar mixture together. Bake in a large casserole dish at 350 degrees for 20 minutes; lower temperature to 300 degrees and bake 20 minutes longer. Remove from oven, top with cracker crumbs, and return to oven long enough to heat crumbs. Serve warm.
