Every year my mom or I make these pumpkin muffins. They are by far my favorite Thanksgiving dessert.
3 cups all-purpose flour
1 tablespoon plus 2 teaspoons pumpkin pie spice
2 teaspoons baking soda
1 ½ teaspoons salt
3 cups granulated sugar
1 can 100% pure pumpkin
4 large eggs
½ cup vegetable oil
½ cup water
½-1 cup chocolate chips(optional)
Preheat the oven to 350° F, paper line or grease 30 muffin cups. In a bowl combine flour,pumpkin pie spice, baking soda, and salt. In a different bowl combine sugar, pumpkin,eggs, oil, and water; beat until blended. Combine flour mixture with pumpkin mixture,mix until thoroughly blended. Add chocolate chips to the batter if desired. Spoon batterinto prepared muffin cups; should be about ¾ full. Bake for 25-30 minutes or until atoothpick inserted is clean. Cool for about 10 minutes before removing and serving.
